Torzi Matthews' Vat No.1 is a blend of Frantoio, Koroneiki, Verdale, and Barossa Wild olive varieties. Harvested in May from the Barossa Valley floor, the greener olives yield approximately 100 liters of oil per 1,000 kg of fruit, producing grassy, bitter, and peppery notes. Later harvests in June and July in the Barossa Ranges (350–450 meters elevation) yield riper olives with flavors of tomato, tropical fruit, and a persistent peppery finish.
Processing occurs within 24 hours of hand-harvesting using cold centrifuge extraction. The oil is released unfiltered after natural settling in stainless steel vats. Vat No.1 has received multiple awards from 2001 to 2010, including Gold at the South Australia Olive Awards (2010) and the Australian Nationals (2006), with judges frequently noting its aromatic complexity and balanced intensity.
