This 2024 Signature Organic EVOO is an early harvest, cold-pressed olive oil produced from a blend of green and turning color olives, including rare Bouqettier, Mission, and Verdale varieties. Unfiltered and unrefined, this oil features fruity, herbaceous flavors with a subtle peppery finish.
The oil is produced from heritage trees that rely exclusively on natural rainfall in the Grampians region. Olives are cold-pressed immediately after harvest, resulting in a low-yield, concentrated product averaging just one liter of oil per tree.
