Hand-selected Verdale, Mission, and Benito varieties are cold-pressed, unfiltered, and bottled immediately while still cloudy to preserve maximum freshness and flavor intensity.
The 2025 Olio Nuovo presents a vibrant medium-intensity profile with complex fruitiness, green herbaceous notes, and a characteristic peppery finish. Rich in polyphenols (typically 250-300 mg/kg), this unfiltered oil showcases fine particles of olive flesh that contribute to its distinctive cloudy appearance and exceptional antioxidant properties.
