Produced from Hojiblanca, Picual, and Coratina olives harvested early in the season when the fruit is still green. Olives are hand-selected from specific blocks on Boundary Bend Olive Groves to ensure peak ripeness, then cold-pressed within 4 hours of picking. The oil has a bright lime green color with gold tones, featuring aromas of freshly mown grass, herbs, citrus zest, and marzipan. On the palate, it is smooth with notes of bitterness and spiciness that develop over time, ending with a clean, balanced finish reminiscent of fresh vegetables and tropical fruit.
